1 c dry soy curls (rehydrated)
3 tbsp taco seasoning
1-1/3 c red lentil pasta (penne)
1 can black beans, rinsed & drained
1/2 c corn
3 c water
Toppings:
sliced avocado
diced tomato
chopped cilantro
fresh lime juice
Saute a 1/2 chopped medium onion with the moist soy curls in a small amount of water.
Once the onion is translucent, add the 3 tbsp. of taco seasoning and stir for a few seconds.
Then add to the pot:
1-1/3 c red lentil pasta (penne)
1 can black beans, rinsed and drained
1/2 c corn
3 c water
Boil, cover and cook for 10 minutes.
Top with a squeeze of lime, avocado, cilantro & chopped tomato.
