1 head of cauliflower, cut into bite size pieces
1 pkt taco seasoning or our "healthy taco seasoning"
1 can black beans, rinsed/drained
tomatoes, chopped
red onion, chopped
jalapenos
chopped chives for garnish
avocado, chopped
Directions
Preheat the oven to 375 degrees and prepare a medium-size cookie sheet with parchment paper.
After cutting the head of cauliflower into bite size pieces, boil for 5 minutes. Remove to a plate with towels. Pour pieces onto the prepared cookie sheet and arrange in a single layer.
Smash the cauliflower florets with the bottom or a glass to slightly flatten. Sprinkle the smashed florets with the taco seasoning using approximately 2-3 tbsp.
Bake for 20 minutes then remove from the oven.
Top with vegan nacho cheese, tomatoes, red onion, and jalapenos. Return to the oven for 15 minutes.
Remove after 15 minutes and top with avocado and chives.
